I love soup! I could eat it almost everyday. It is such a versatile and fulfilling way to cook a variety of ingredients. Veggie Soup with Potatoes and Beef
Ingredients:
- 2 large carrots peeled and chopped
- 2 stalks celery washed and chopped
- 1 medium onion finely diced
- 5-6 cloves garlic chopped
- 1 package beef stew meat (optional)
- 1 tsp olive oil
- 1 tsp thyme
- 1 tsp oregano
- 2 bay leaves
- Salt and pepper to taste
- 5 large red potatoes peeled and chopped
- 2-4 cups water (enough to cover everything in a stock pot)
- 1 medium bunch kale (10-12 leaves) washed and chopped
- 1 package frozen peas
Directions:
- Place chopped carrots, onion, celery and garlic in a large stockpot with olive oil.
- Sauté on medium heat until onions are translucent, approximately 5-7 minutes.
- Add seasoning and cook for 3 minutes.
- If using the beef add to pot and cook on high heat for 10 minutes until browned, stirring often.
- Add potatoes and water.
- Bring to a boil and then reduce heat to medium allow to simmer until potatoes are tender, approximately 20 minutes.
- When potatoes are soft add chopped kale and frozen peas and simmer another 10-12 minutes.
- Serve warm with slices of crusty French bread and enjoy!
