This recipe has all the rich qualities of a brownie, but can also be enjoyed by any friends or family members with celiac disease or gluten intolerance.
Beans make a wonderful and original alternative to refined flours, also making these brownies more nutritious than the conventional version. They are a chewy, chocolaty way to healthfully satisfy that sweets craving.
Black Bean Brownies
Ingredients:
- 1 (15-1/2 ounce) can black beans (rinsed and drained)
- 3 eggs
- 3 tablespoons oil
- 4 tablespoons cocoa powder
- 1 pinch salt
- 1 teaspoon vanilla extract
- 3/4 cup sugar
Directions:
- Preheat oven to 350 degrees F.
- Mix ingredients together in a blender/food processor until pureed.
- Pour into a greased 8x8-inch cake pan.
- Stir in some chocolate chips and nuts or leave plain.
- Bake for approximately 30 minutes.
- Let cool before cutting.
